Mince Pies and Gingerbread

Merry Christmas!
So this past week I have been busy baking some gingerbread's and mince pies!
So to that I wanted to share the recipes of the both of the goodies! And may I say they are going very well in my house so far!

Gingerbread Men:

Ingredients:
  • 250g/8oz Plain Flour
  • 75g/3oz Butter Softned
  • 75g/3oz Sugar
  • 1/2 teaspoon Bicarbonate Soda
  • 50g/2oz Golden Syrup
  • 1 Egg Yolk
  • 1/2 teaspoon ground ginger & cinnamon 
  • Ginger bread cutter


Method:

1. Cream butter & sugar until light & fluffy
2. Add bicarbonate soda, golden syrup, egg yolk mix well
3. Sift flour & spice in the bowl, mix well until well combined.
4. Wrap in a ball, chill in the fridge about 30 minutes.
5. Thinly roll out dough use the gingerbread cutter.
6. Place lightly on the baking sheets.
7. Bake 180*C about 10-12 minutes until golden.
8. When baked transfer on a wire rack.

Mince Pies with the star:

For this I got a star cutter in a cooking shop up in Cork City to make the mince pies more festive looking!
Along that you can freeze the mince pies up three months!

Ingredients:
  • 225g/8oz Plain Flour
  • 125g/4oz Caster Sugar
  • 100g Ground Almond
  • 125g/4oz Soft Butter
  • 1 Beaten Egg
  • A  Little Water
  • 450g Mincemeat


Method:
1. In a bowl put the plain flour, caster sugar and ground almond in a bowl, mix it well. (I use my hands doing it, if you don't want to you can use a wooden spoon.)
2. Place the soft butter in the bowl, rub the butter in the mixture. Just like rubbing it in when making scones!
3. After that you add the beaten egg, with this mix it in well. If dry add a drop of water not too much as you don't the mixture too wet.
4. If it's all mixed in well, turn onto a lightly floured board. Knead into a ball. Put in clingfilm and chill in the fridge for 30-45 minutes. 
5. When out of the fridge, roll out on a flour covered board/table, I special tin for mince pies have the tins covered in margarine.
6. Keep some dough left for the stars for the top.
6. Have oven at 200*C Fan, bake for 15 minutes until golden brown.
