Lemon Posset with Spiced Berries

Hello, everyone!
How are you all doing! Since I'm back to college I have been busy making some gorgeous desserts in college this week. On Monday I made this Lemon Posset with Spiced Berries. 
This serves for four people
Here are the ingredients 
The Posset:
500ml Cream
125g Caster Sugar
2 Lemon juices 
Spiced Berries
175g Mixed Berries
300ml Red Wine or red cooking red wine
1 cinnamon stick
2 Star Anise 
1 pinch of mixed spice
200g Caster Sugar

If you want to make it extra special you make some sugar cakes
250g Melted butter
125g Caster Sugar
375g Plain flour
1tsp Nutmeg Grated

Method:
1. Boil the cream with herbs at boiling point add the lemon juice and sugar, Mix well
2. Pass the cream through a strainer set in serving glasses and chill in the fridge or blast chiller if you have one.
3. Hull the berries half the large ones. Remove stalks
4. Boil the red wine, cinnamon, star anise, mixed spice and sugar
5. Add fruits and remove from the heat to steep (to soak in the fruit)
6. Preheat oven at 170*C  mix the cake ingredients into a dough, roll out in a sausage roll and rest the fridge.
7. Cut into rounds of 1cm thickness and bake on non-stick mat for 10 minutes.
8. Lift and allow to cool on a wire rack
9. Spoon some fruit on top of the posset, serve with sugar cakes.

That's it, very simple to do!
