Spagetti Carbonara

It's been a while! I have been busy cooking in college and doing a few assignments which were due before easter.
So one week we were doing Italian cuisine cooking and we made a very delicious dish Spaghetti Carbonara which usually it's with pasta.
Now we had to cut down the recipe from 10 portions to 1/2 portions but really it was for one I did. This was a really quick to cook as we had everything prepped and ready to begin cooking.
Ingredients
- Bacon (Cut into sqaures) 40g
- Butter 25g
- Eggs 2x
- Parmesan Cheese (Grated) 10g
- Double Cream 40ml
- Butter 10g
- Garlic (finely chopped) 1 clove
- White wine 20ml
- Egg yolks from carton 50ml ( best to use liquidise egg instead of fresh egg yolks because it wouldn't work for the method at all.)
- spaghetti 120g
- Parmesan cheese (grated for garnish) 15g
Method:
- Cut bacon into small pieces cook in the butter
- When light brown adds the garlic
- Along the garlic to cook for a few moments and then add the white wine, allow it to reduce
- Mix the eggs, cheeses and cream together well
- Place the spaghetti into a pan of boiling water and allow to cook for 12-15 minutes
- Heat butter in pan and add the spaghetti and add the bacon and cream mixture allow to thicken slightly and allow to boil
- Place into a serving dish with parmesan on top as garnish
That's it! Pretty simple! Just don't scramble the egg mixture as some students had that little accident, and always have a little bit more parmesan than the recipe says and mix it with the spaghetti it gives it such a nice flavour taste when your eating it!
